 Buongiorno (good morning) Reader, Something magical happens when you're in Italy. It's like all of the sudden time slows down and you just get enjoy what's happening around you...the beautiful views, the delicious food, and the amazing people around you. I'm currently writing to you from Calabria! There's not much to complain about when this is my view and I've been eating pasta and drinking wine all day! Last week, a couple of my friends and I spent a magical time exploring some of the Emilia-Romagna region, including Bologna, Modena, and Parma. We even got to visit a Parmigiano Reggiano facility. More on this later! Speaking of time slowing down in Italy, I've really been enjoying the beauty of long meals. Having come to Italy many times, along with spending 3 months here for culinary school, I've come to love this tradition more and more each time I'm here. Typically, Italians will take 2+ hours to enjoy a meal. Which, if you're not used to this, can seem like a long time just for dinner. But honestly, it's such a great way to enjoy the company around you and get to eat even more amazing food. If you've ever seen an Italian menu, you'll know it's laid out by courses. You have the antipasto (appetizer), the primo (which is usually pasta or risotto), then secondo (the main dish, usually a protein), and dolce (dessert). It's rare to eat a meal without wine here, so usually you'll grab a glass of wine, order all your courses, and the server will slowly bring them out. I love eating in courses because you get to try more food, plus it gives you a while to digest the food and have a little break in between the next part of the meal. Here's some of the amazing multi-course meals I've been eating in Calabria! First, we've got a seafood platter, mussel & clam pasta, and tiramisu. Next up, we had this amazing pasta primavera (with amazing summer tomatoes), sous vide octopus with bean puree, and a small peach tart with caramel. What they say really is true!
